Sauvignon Blanc

Sauvignon Blanc (so-vee-n’yohn blanc or blahn) is one of the most successful white wines produced in California. Like Chardonnay, Sauvignon Blanc takes on a wide variety of styles depending on the climate and decisions made in the vineyard and winery. It’s best known for aromas and flavors that range from assertive and pungently herbal—often grassy—to crisp and bright, with citrus and green apple characters.  When Sauvignon Blanc undergoes oak aging, its flavors take on rich, toasty character; these oak-aged wines are often labeled Fumé Blanc.  Often the wine is blended with Semillon, which adds notes of honey.  No matter what the style, Sauvignon Blanc is usually lively, dry and exceptionally easy to pair with food.  A chilled glass brings out the best in fish, chicken and shellfish dishes.
